Ingredients:

Salsa de Chicharrón
🌶️ 3 red jalapeños
🍅 1 Roma tomato
🧅 1/8 of an onion
🧄 2 garlic cloves
🧂 Salt to taste
💧 1 cup hot water
🐷 1 cup of pork cracklings
Crackling Guacamole
🌿 1/2 tsp cumin seeds
🌿 1 tsp peppercorn
🧄 1 garlic clove
🥑 2 tbsp avocado or olive oil
🐷 2 cups of chicharrones
🧂 Salt to taste


Instructions:

  1. Prepare the Salsa de Chicharrón:
    • Char the red jalapeños, Roma tomato, onion, and garlic in a skillet over medium heat until they have a nice roasted look.
    • Place the charred ingredients into a blender. Add salt to taste and 1 cup of hot water. Blend until the mixture is smooth and runny.
    • Take 1 cup of pork cracklings and add them to the blender with the salsa. Blend again until the salsa thickens. Set aside.
  2. Prepare the Crackling Guacamole:
    • In a mortar and pestle, crush cumin seeds, peppercorn, and 1 garlic clove until finely ground.
    • Add 2 tbsp of avocado or olive oil to the mixture. Continue to crush until everything is well combined and smooth.
    • In a separate bowl, take 2 cups of chicharrones and crush them into smaller pieces.
    • Combine the crushed chicharrones with the spice paste.
    • Add ripe avocados to the bowl and season with salt. Mash and mix everything until smoothly combined.
  3. Serve:
    • For a beautiful presentation, garnish with fresh cilantro and more cracklings on top of both the salsa and guacamole.
    • Enjoy this delightful duo with your choice of tacos or as a tasty snack with tortilla chips.
